The aging process of Cheddar cheese usually takes between 3 months and 3 years. Which flavor you like better depends on your personal preference. Cheddar cheese is named after the small village of Cheddar in Somerset, England. This is where they started producing Cheddar cheese. In this village you will also find the caves of Cheddar Gorge. These are limestone caves, in which the temperature is perfect for ripening the cheese. Many cheese manufacturers from this village choose to age their cheeses exclusively in the limestone caves. Incidentally, Cheddar is not a protected title and other countries are also allowed to produce their own Cheddar cheeses. Therefore, Ireland, Canada and Sweden have their own Cheddar cheese dairies.
