Origin
Hay flower cheese originates from Käserei Stofel, located in the town of Unterwasser in the northeastern part of St. Gallen in Switzerland. Here Thomas Stadelmann makes various cheeses and dairy products, including the Hay flower cheese. The cheese is named after the German word for hay flower: Heublumen. The cheese is coated in Heublumen. It is an expression of the more traditional Swiss Alpine-style cheese. Organic milk is used for production. After production, the cheeses are ripened for two months in a special ripening room. A dense layer of hay bales is then applied to the outer side. The cheeses are then ripened for another two months. This is how this delicious hay flower cheese is created.

This creamy, soft cheese is ideal for use in the kitchen due to its good melting quality. The cheese melts beautifully. This makes the Hay flower cheese ideal as a fondue cheese, but it is also a nice, tasteful addition to warm dishes.
